For Christmas my family does gifts for the kids and then little somethings for everyone else.
My little something contribution is normally an assorted treat bag for everyone;
Peppermint Bark
Lemon Bark
and
Cinnamon, Sugar and White Chocolate Pretzels.
I had to edit my treat to do list, but I did make Lemon and Peppermint Bark.
If you have never had Lemon Bark, and like lemon, this is another MUST MAKE recipe.
I found the recipe a few years ago on THIS amazing blog.
Once I saw it, I had to make it.
I found the recipe a few years ago on THIS amazing blog.
Once I saw it, I had to make it.
Look at all that light yellow delightfulness!
Every bite has small bits of lemon and the occassional large piece of tart and sweet goodness.
Smooth, creamy and refreshing. Best of all, the recipe is a snap.
All you need is one large box of Lemonheads and two bags of vanilla candy melts.
Next you need to crush your lemonheads.
You can put them in a ziplock bag and take our your agressions with a meat tenderizer
or you can pop them in the food processor.
I went for option 2
Boy, was it LOUD! Like super duper loud.
But here was the nice outcome.
Lots of powder and some larger pieces.
Set aside.
I used a double boiler to melt the candy melts.
You can also melt in the microwave, just be sure to melt in 15 second intervals and stir in between.
Ooooooh, look at that.
Add the lemonheads, set a bit aside for topping.
Pour the mixture onto a cookie sheet covered in wax paper
add the remaining Lemonheads.
Give it a little shimmy shake to even out and spread the bark and let cool.
Look at those big old chunks.
MMMMMMMMmmmmm.
Once completely cool, pull the bark away from the wax paper and break into pieces.
I then package in clear treat bags with ribbon.
I totally forgot to take a picture of the finished gifts, but hey, you can't doubt the goodness.
Try it, you'll like it.
XOXO
