The hot summer weather broke last week
and we have had the most wonderful fall like temperatures!
Combine the gorgeous weather and over ripe bananas in my fruit bowl
and I thought banana bread!
I can bake again. :)
Then Jaime suggested chocolate chip banana bread.
Even better!
I consulted my dear friend Google and found THIS great recipe.
I made a few tweaks,
adding in vanilla, cinnamon and less banana (I only had 2).
I also added in one chopped Hershey's bar instead of chocolate chips,
since it was the only chocolate I had on hand and didn't want to go to the store.
Necessity is the mother of invention after all, right?
Here is the modified recipe:
Chocolate Chip Banana Bread
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter
- 3/4 cup brown sugar
- 1 teaspoon of cinnamon
- 1 teaspoon of vanilla
- 2 eggs, beaten
- 2 mashed overripe bananas - 3 for a strong banana flavor
- One chocolate bar, finely chopped. - Can also use 2 cups of chocolate chips
Directions
I cooked my bread for 60 minutes
and it looked like this out of the oven.
While it was cooling off, Jaime decided to taste test the crust.

Here is the inside.
The chopped chocolate was melted through on the bottom.
The bread had a wonderfully light banana and chocolate flavor,
not overly sweet and with a hint of cinnamon.
I used ingredients I had on hand and was really pleased with the results.
